A natural mutation of the Bourbon variety, Yellow Bourbon is distinguished by its bright yellow cherries — a rarity in a world where most coffee cherries ripen to red. This variety is prized for its exceptional sweetness, full body, and remarkable versatility, making it a favourite among roasters and drinkers alike. In Brazil, Yellow Bourbon has become virtually synonymous with quality, consistently claiming top honours at Cup of Excellence competitions.

This batch originates from Cerrado in Minas Gerais — the first coffee region in Brazil to receive official Denominação de Origem (DO) status, recognising its exceptional terroir and consistent quality. Cerrado’s distinctive characteristics include optimal altitude, clearly defined wet and dry seasons, flat open terrain that facilitates efficient farming, and mineral-rich volcanic soils. These conditions combine to produce coffee of remarkable consistency and cleanliness year after year.
Yellow Bourbon is notably particular about its growing environment, but when conditions are right, it delivers an extraordinary cup. We use traditional natural processing for this lot. After harvest, the cherries undergo flotation and hand-sorting to remove any defective or underripe fruit. They are then spread on patios or raised beds to dry slowly. The natural method allows the beans to absorb the fruit’s sugars fully, intensifying the variety’s signature sweetness and producing a full-bodied, flavour-forward cup.

Roaster’s Notes
We brought this Yellow Bourbon to a medium-dark roast to fully express its inherent sweetness and body. At this roast level, the sugars within the bean undergo thorough caramelisation, yielding robust roasted nut, dark chocolate, and caramel notes that define the cup. Acidity is intentionally subdued — present but barely perceptible. The result is an exceptionally smooth, full-bodied coffee that we characterise as “comfort coffee” — accessible, reliable, and deeply satisfying without the need for elaborate tasting notes.
Brewing Guidelines
- Recommended methods: French Press / Espresso machine / Pour-over (V60 or Kalita) / AeroPress
- Brew ratio: 1:14 – 1:16 (e.g., 15 g coffee to 210–240 ml water)
- Water temperature: 88°C – 92°C — medium-dark roasts benefit from cooler water to avoid extracting undesirable bitter compounds
- Grind size: Medium (similar in texture to sea salt)

Storage & Freshness
This coffee is packaged immediately after roasting in one-way valve bags to degas while preventing oxygen ingress. Optimal flavor expression is achieved within 30 days post-roast. Store in a cool, dry environment away from direct sunlight. Reseal after each use to preserve freshness.
