Once a small town within Ethiopia’s Sidamo region, it has since become a denomination in its own right — such is the distinctiveness of the coffee it produces. For countless coffee drinkers, the name “Yirgacheffe” has become synonymous with floral elegance, citrus brightness, and a refined, tea-like clarity that few other origins can replicate.

In the local language, the name “Yirgacheffe” translates to “land where we rest” — a fitting description for a region that has given the coffee world one of its most beloved and enduring flavour profiles. Yirgacheffe was also among the first coffees in history to be recognised and marketed by its region of origin rather than its port of export, setting a precedent that helped shape the modern specialty coffee movement.

This batch originates from Kochere, one of the core micro-regions within Yirgacheffe, renowned for producing some of the most consistently exceptional lots in the district. The combination of high elevation (reaching 2,100 metres), reliable rainfall patterns, and nutrient-rich volcanic soils creates ideal conditions for slow cherry maturation and the development of complex flavour precursors.

The variety here is Ethiopian Heirloom — a diverse population of native landraces that have evolved over centuries in Ethiopia’s unique terroir. This genetic diversity is the source of Yirgacheffe’s signature complexity and layered flavour expression.

We use classic washed processing for this lot. After harvest, the cherries are hand-sorted to remove any underripe or defective fruit. They are then pulped, fermented to break down the mucilage, thoroughly washed, and dried. The washed method removes the fruit’s sugars during processing, leaving the bean’s intrinsic flavour characteristics fully exposed. The result is a super clean, transparent cup with the bright, vibrant acidity that Yirgacheffe is celebrated for.

This lot carries a G1 (Grade 1) classification — the highest tier in Ethiopia’s coffee grading system. This designation indicates meticulous sorting, minimal defects, consistent bean size, and rigorous quality control. Roaster’s Notes

We selected a medium roast for this Yirgacheffe G1 lot to achieve an optimal balance. While lighter roasts are common for Yirgacheffe, our medium roast approach serves a specific purpose: it tempers the acidity just slightly, rendering the coffee more approachable and suitable for daily drinking without compromising the signature flavour identity. You still experience the full lemon, citrus, and jasmine character, but the finish now carries additional layers of black tea and nutty notes. Acidity, sweetness, and bitterness converge with a refined, elegant balance that works beautifully as a black coffee or paired with food.
