Ethiopia is widely regarded as the birthplace of coffee, and the Guji region has emerged as one of its most celebrated origins — producing some of the most complex and sought-after natural-processed coffees in the specialty market. The Hua Kui lot, first introduced to international attention in 2017, exemplifies the very best of what Guji has to offer. That year, this coffee from the Hambella district won the Natural category at the Africa Fine Coffee Association’s Taste of Harvest competition. Upon its arrival in China, it was given the name “Hua Kui” — meaning “queen of flowers” or “top beauty” — a tribute to its rich, layered aromatic profile.

This Hua Kui coffee is cultivated in the high-altitude terrains of Hambella, where elevations reaching 2,350 metres combine with rich, volcanic soils to create ideal growing conditions. The high elevation allows the coffee cherries to ripen slowly, developing an exceptional depth of flavour and structural complexity.

The variety here is the classic Ethiopian Heirloom — a diverse population of native landraces that collectively contribute to the coffee’s signature layered and multifaceted flavour profile. Rather than a single uniform cultivar, this genetic diversity is precisely what gives Ethiopian coffees their distinctive and unpredictable complexity.

We use traditional natural (dry) processing for this lot. After harvesting, the cherries undergo careful hand-sorting to ensure only the ripest fruit is selected. They are then laid out on raised African beds to dry slowly over a period of 15 to 20 days. This method allows the beans to absorb the fruit’s natural sugars and sweetness, resulting in a fuller body, pronounced fruit-forward characteristics, and the subtle fermented notes that natural-processed Ethiopians are prized for.

Roaster’s Notes

We selected a medium roast for this Hua Kui lot to achieve a specific objective: balancing the bright, fruit-forward character typical of lighter roasts with the approachability required for everyday drinking. The medium roast tempers the acidity slightly while coaxing out a smoother, rounder mouthfeel. You still experience the signature berries and citrus of Hua Kui, but with added layers of nutty, creamy, and dark chocolate depth. The result is a cup where acidity, sweetness, and bitterness are all in equilibrium — versatile enough for daily drinking and food pairing.

Brewing Guidelines

  • Recommended methods: Pour-over (V60) / French Press / AeroPress
  • Brew ratio: 1:15 – 1:16 (e.g., 15 g coffee to 225–240 ml water)
  • Water temperature: 92°C – 93°C — medium roasts benefit from slightly higher temperatures to fully extract their flavour spectrum
  • Grind size: Medium-fine (similar in texture to table sugar)
