Description

Industry Context

Sumatran Mandheling occupies a singular position in the specialty coffee landscape. It is not a coffee that seeks to please everyone — nor should it be. With its brooding, full-bodied profile marked by low acidity and deep, resonant sweetness, Mandheling appeals to those who appreciate coffee at its most grounded. It is the coffee of rainy afternoons, late nights, and moments that call for quiet contemplation.

Bitter, but not harsh. Sweet, but not cloying. This is a dark poetic statement in a cup.

Origin & Varietal

Region: Sumatra, Indonesia
Altitude: 1,100 – 1,600 m
Variety: Arabica (Typica-derived)
Processing: Wet-Hulling (Giling Basah)
Roast level: Medium-Dark

The wet-hulling process, known locally as Giling Basah, is unique to Sumatra and stands as one of the most distinctive post-harvest methods in the coffee world. Unlike conventional washed or natural processing — where the parchment layer is removed only after the beans have been dried to optimal moisture levels — wet-hulling strips the parchment while the beans still retain approximately 30-35% moisture. This semi-dry approach dramatically shortens the drying period and imparts Mandheling with its signature herbaceous spice notes and unparalleled body — a flavor fingerprint that no other origin can replicate.

The Typica-derived Arabica varieties grown across Sumatra’s high-altitude regions, particularly at elevations ranging from 1,100 to 1,600 meters, form the foundation of this distinctive profile. The combination of volcanic soils, tropical climate, and the wet-hulling method converges to produce a cup that is unmistakably Sumatran.

Flavor Profile

Aroma (Ground): Rich roasted nut and dark chocolate notes emerge first, followed by subtle herbaceous spice and caramel sweetness.

Aroma (Brewing): As hot water is poured, liquorice and cinnamon-like spice aromatics are released, with a caramel sweetness anchoring the foundation.

Flavor Progression:

  • Hot: A dense, full-bodied dark chocolate character dominates the palate. Acidity is barely perceptible — the bitterness is clean, pure, and intentional
  • Warm: Caramel sweetness and herbaceous spice notes unfold, revealing the complexity of liquorice and cinnamon-like layers
  • Cool: Sweetness becomes more pronounced, culminating in a lingering finish with a resonant, enduring aftertaste — the defining moment of Mandheling’s signature “bitter gives way to sweet” resolution

This is a coffee that refuses to compromise. There is no fruit-forward flamboyance, no floral lightness — only the deep, grounded body and profound, lasting sweetness that belongs to the earth from which it comes.

Brewing Guidelines

  • Pour-over (V60) — Recommended: 1:14 ratio / 88-90°C / Medium grind — maximizes body and clarity; the preferred method
  • French Press: 1:13 ratio / 88°C / Coarse grind — delivers a rich, full mouthfeel with pronounced oiliness
  • AeroPress: 1:13 ratio / 87°C / Medium-fine grind — produces a clean yet full-bodied cup
  • Espresso: 1:2 ratio / Fine grind — performs exceptionally well as a milk-based beverage base, with prominent chocolate notes that complement dairy

Recommended For

  • Ideal for: Drinkers who appreciate full-bodied, low-acid coffees; seasoned Mandheling enthusiasts and those who favor intense, weighty profiles; consumers who primarily prepare milk-based espresso beverages
  • Not recommended for: Those who exclusively prefer light-roasted, fruit-forward coffees; drinkers who dislike any degree of bitterness; those seeking floral or bright, fruit-driven flavour profiles

Storage & Freshness

This coffee is packaged immediately after roasting in one-way valve bags to degas while preventing oxygen ingress. Medium-dark roasts off-gas more rapidly than lighter roasts; we recommend allowing the bag to degas briefly after opening before resealing. Optimal flavor expression is achieved within 30 days post-roast. Store in a cool, dry environment away from direct sunlight.
