Description
Industry Context
Geisha is not merely a coffee — it is a phenomenon. Originally native to the forests of Ethiopia, Geisha made its way to Panama via Costa Rica, where it found an extraordinary new home. In 2004, a Geisha lot from Hacienda La Esmeralda entered the Best of Panama competition and fundamentally altered the trajectory of specialty coffee. The judges were astonished — the floral and citrus notes they encountered were unlike anything previously experienced in coffee. That moment marked the emergence of Geisha as the world’s most coveted coffee variety.
Today, Geisha stands as the holy grail of specialty coffee, consistently commanding record-breaking auction prices and captivating drinkers with its unparalleled aromatic elegance.
Origin & Varietal
Region: Boquete, Chiriquí, Panama
Altitude: 1,600 – 1,800 m
Variety: Geisha
Processing: Natural
Roast level: Light
This batch originates from Boquete, widely regarded as the birthplace of Panamanian Geisha. Nestled in the highlands of Chiriquí, Boquete is characterised by its cloud forests, volcanic soils, and a unique microclimate shaped by converging winds from both the Pacific and Atlantic oceans. These exceptional conditions produce the distinctive flavour profile that has made Panamanian Geisha legendary.
We use natural processing for this Geisha lot. The cherries undergo multiple rounds of meticulous hand-sorting — only the ripest, most visually perfect cherries are selected. They are then spread on raised African beds to dry slowly. The natural method allows the fruit’s sugars and fermentation-derived complexity to integrate fully into the beans, yielding intense tropical fruit flavours and a fuller, more rounded body.
Flavor Profile
Aroma (Ground): Expansive jasmine and bergamot, with peach and subtle honey sweetness in the background.
Aroma (Brewing): Tropical fruit notes of mango, passion fruit, and lychee emerge vibrantly, layered with orange blossom and hints of rose.
Flavor Progression:
- First sip: Bergamot and jasmine lead with remarkable lift and clarity — the signature Geisha opening
- Mid-cup: Mango and passion fruit notes expand, delivering a juice-like tropical sweetness
- Finish: Lychee and honey linger with exceptional length — clean, persistent, and extraordinarily elegant
The cup is reminiscent of drinking a floral tea — refined, luminous, and impeccably structured. The aftertaste is notably enduring, a hallmark of exceptional Geisha quality.
Roaster’s Notes
We selected a light roast for this Geisha lot, and for good reason. Geisha’s defining characteristics — its delicate floral aromatics, its citrus brightness, its layered complexity — are at their most expressive when the roast profile is kept light. Any darker roast would obscure the very qualities that make Geisha extraordinary. The light roast preserves the full spectrum of jasmine, bergamot, and tropical fruit notes, ensuring they shine through with clarity and precision. The cup is clean, complex, and unmistakably elegant — a roast profile that honours the bean’s potential rather than diminishing it.
Why Is Geisha So Expensive?
- Low yield: Geisha is notoriously particular about its growing conditions. It refuses to thrive in just any environment, and its cherry output is significantly lower than that of conventional varieties
- Labour-intensive cultivation: Cherries ripen at different rates, requiring multiple passes of hand-picking to ensure only optimally ripe fruit is harvested
- Consistently exceptional scores: Geisha lots dominate the Best of Panama auctions year after year, with prices continuing to break records
- Uniquely distinctive flavour: The combination of jasmine and bergamot — a flavour signature that no other variety can replicate
Brewing Guidelines
- Recommended methods: Pour-over (V60) / AeroPress / Chemex
- Brew ratio: 1:15 – 1:16 (e.g., 15 g coffee to 225–240 ml water)
- Water temperature: 90°C – 92°C — light roasts require slightly cooler water to avoid over-extraction and preserve delicate aromatics
- Grind size: Medium-fine (similar in texture to table sugar)
Recommended For
- Ideal for: Special occasions and personal indulgence; gifts for dedicated coffee enthusiasts; rewarding yourself after a demanding week; collectors and connoisseurs building a curated coffee selection
- Not recommended for: Those who prefer dark-roast, full-bodied profiles; drinkers seeking a daily, cost-efficient option; anyone who finds floral or delicate flavour profiles unfamiliar or unappealing
