Description

Industry Context

Pink Bourbon is one of the rarest and most sought-after varieties in specialty coffee. Its pink-hued cherries and notoriously low yields have earned it the fitting moniker “the Panda of the Coffee World” — a symbol of both scarcity and quiet distinction.

Origin & Varietal

Pink Bourbon is a natural mutation of the Bourbon variety, sharing its genetic lineage with Red Bourbon and Yellow Bourbon. The pink coloration of its cherries is governed by a recessive gene that is highly susceptible to environmental interference. This genetic trait makes production inherently unstable and difficult to maintain at scale, which explains why commercial cultivation remains extremely limited.

Today, Pink Bourbon is primarily grown in high-altitude estates across Colombia, Guatemala, and El Salvador, where meticulous farm management is essential to sustain its fragile yields.

Flavor Profile

Despite its production challenges, Pink Bourbon delivers a cup quality that is nothing short of exceptional — elevating the Bourbon variety beyond its reputation for being comparatively neutral in profile. Its sensory attributes include:

  • Bright acidity and fruit expression: Grapefruit, citrus, plum, and peach-like sweet-tart notes
  • Distinct florals: Hibiscus and delicate floral undertones
  • Persistent sweetness and clean finish: Mid-palate nuttiness gives way to brown sugar and caramel-like sweetness, with a smooth, clean aftertaste

Agronomic Challenges & Processing Innovations

Beyond its inherently low productivity, Pink Bourbon is also highly susceptible to leaf rust (Hemileia vastatrix), further compounding its scarcity. To enhance and preserve its delicate flavor attributes, some producers have experimented with innovative processing methods — such as anaerobic washed processing — which have proven effective in accentuating its fruit and floral characteristics while contributing to its growing popularity among specialty roasters.
